The Greek Coffee made in “Hovoli” is to add water, sugar and Greek coffee into the brass “briki” and then place it on “Hovoli” to boil.
Hovoli is a special equipment with hot sand that allows coffee to boil slowly while keeping it’s aromas and thick cream on top.

Although most of the modern coffee shops prefer the espresso machines to make the Greek coffee the taste is not the same as the coffee made in Hovoli.
